Banish the Winter Blues with a Welsh Rarebit


Last Monday (18 January) was named the most depressing day of the year and with the bad weather causing further gloom Collier’s Powerful Welsh Cheddar is putting forward the call for the last Monday of January to be “National Welsh Rarebit Day” and urging everyone to cheer themselves up with the ultimate comfort food – Welsh Rarebit.

Academics calculated that “Blue Monday” was the worst day of the year as the Christmas glow had faded away, New Year’s resolutions had been broken, cold weather had set in and credit card bills had be coming in.
 
But the people behind the UK’s Best Extra Mature Cheddar, Collier’s Powerful Welsh Cheddar, say that final Monday of January (25th January in 2010) should be called “National Welsh Rarebit Day” as it is the best meal to soothe, comfort and raise the spirits.
 
Welsh Rarebit is not only irresistible but importantly is quick and easy to make, but a mature cheese like Collier’s Powerful Welsh Cheddar is key for the essential tastiness in the best Welsh Rarebit.
Here is TV chef Matt Tebbutt’s irresistible recipe for the best Welsh Rarebit to banish the winter blues:
Collier’s Welsh Rarebit  
 
3 egg yolks
50ml brown ale
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
200g Colliers cheddar
4 shallots – finely diced
3 x traditional muffins, cut in half 
 
Mix all the ingredients together in a bowl. Toast the muffins on both sides. Spread a layer of the cheese mix on top, quite thickly, and grill until brown and bubbling.
